It would be nice if we had built-in support for creating plotting 2-dimensional categorical data. Using the levels keyword argument for this results in mismatched labels: http://stackoverflow.com/questions/38609648/how-to-move-color-scale-labels-to-middle-of-colored-fields-in-matplotlib-xarray
