Thanks @kmuehlbauer! That does give me the same dataset structure as before which can go directly into my pipeline.

However, I'd like to note that the previous method offloaded more of the work to xarray through the API which made the code more clear to understand. It was more explicit since one could specify that concatenation should happen for the time-coordinate, and the post-processor was just one short operation.

If this API will be changed again in the future it's something that could be kept in mind.

I found that dask was version 0.11 on Windows but 0.15 on Linux. Upgrading the Windows version to 0.15 fixed the issue, indicating that the problem was the version of dask.
