Ah I think this is the same issue as #5686 -- sorry I didn't realize it at the time! The pickling problem should be fixed with cftime version 1.5.1, which was released today. I agree though, eventually in xarray we will want to support the new style of cftime.datetime objects as well as (or possibly instead of) the subclasses.
