We do lose the name of the columns (but that's all - do you think we're losing more than than?) @shoyer will have a better view as to whether `to_xray()` should return a `DataArray` or `Dataset`. I think a `Dataset` would be cleaner, although we're going to have to `glom` together types anyway if it's a Panel, and users may be expecting an array-like object.
