Thus, the last line should be replaced with:

ds.update(ds[['varA', 'varB']] - ds[['varA', 'varB']].mean(dim='time'))
```

and it works as intended.

Probably that the way to assign several variables at once in a Dataset should be emphasized in the documentation with an example.
