It doesn't have changed much since creation of your issue. Xarray doesn't take the netcdf default fill values into account (there are reasons, which @shoyer has explained in https://github.com/pydata/xarray/pull/5680#issuecomment-895455163 and https://github.com/pydata/xarray/pull/5680#issuecomment-895508489). On write it just uses `NaN` as `_FillValue` (in case no specific `encoding` is given).
